Shmurah (watched) matzah is made from wheat watched carefully from harvest to baking to ensure it stays dry and unleavened. 

Shmurah matzahs are round, shaped by hand, and are most similar to the matzahs baked as they left Egypt. It is optimal to eat shmurah matzah on the first two nights of Passover.
